The young oysters are sorted to obtain uniform sizes to optimise their growth at sea. This process takes place during the winter. The sorting of the oysters is carried out by a machine that sorts the oyster using a water system to avoid stressing the oysters.
When the oysters are fully grown, they are sorted into different groups according to size, the smaller the oyster reference number, the bigger the oyster.
The fully-grown sorted oysters are then placed on high oyster beds in the sea for 1 month, in order to toughen their muscle to enable them to gain strength to withstand shipment.
