Oyster recipes


However there are many cooked oyster recipes

These are a couple of our favourites.....



Quantity : 4 people

Preparation time : 15 minutes

Cooking time : 30 minutes



2 dozen Gold Beach Oysters N° 2 or N°1

6 shallots

20 g butter

20cl white wine

4 table spoons of cream

Grated cheese




  1. Peel and cut up the shallots, cook them slowly in hot butter. Before they start to brown , add the wine, let it reduce.

Add pepper and add the cream.



  1. Add a little of the sauce to each of the oysters (that have been prior to this opened, and detached from their shell; you can put the shells on a bed of sea salt so they will not move).

  2. Sprinkle a little grated cheese and then put under a hot grill until they are brown.

  3. Serve hot and enjoy!

3 dozen Gold Beach Oysters N° 2 (or N°1)

2 leeks

1 onion

2 shallots

100 g double cream

5 cl of white wine

Cheese (Gruyère)


Salt and Pepper




  1. Open the oyster and remove the top shell

  2. For the sauce wash the leeks and cut them into small pieces, also cut up the onion and the shallots into small pieces

  3. In a non-stick pan, melt a little butter and put the leeks, onion and shallots, let them cook without browning.

  4. Add pepper and the cream and the wine; let it simmer for about 5 minutes.
