These are a couple of our favourites.....
COOKED OYSTERS GRATIN
Quantity : 4 people
Preparation time : 15 minutes
Cooking time : 30 minutes
2 dozen Gold Beach Oysters N° 2 or N°1
20 g butter
20cl white wine
4 table spoons of cream
Peel and cut up the shallots, cook them slowly in hot butter. Before they start to brown , add the wine, let it reduce.
Add pepper and add the cream.
Add a little of the sauce to each of the oysters (that have been prior to this opened, and detached from their shell; you can put the shells on a bed of sea salt so they will not move).
Sprinkle a little grated cheese and then put under a hot grill until they are brown.
Serve hot and enjoy!
OYSTER AND LEEK GRATIN
Quantity : 6 people
Preparation time : 25 minutes
Cooking time : 15 minutes
3 dozen Gold Beach Oysters N° 2 (or N°1)
100 g double cream
5 cl of white wine
Salt and Pepper
Open the oyster and remove the top shell
For the sauce wash the leeks and cut them into small pieces, also cut up the onion and the shallots into small pieces
In a non-stick pan, melt a little butter and put the leeks, onion and shallots, let them cook without browning.
Add pepper and the cream and the wine; let it simmer for about 5 minutes.
